Two honey jars sit beside each other. One says “100% Pure.” The other says “Natural.” A third might add “raw,” “forest,” “wild,” “premium” or the name of a flower. With enough reassuring words on the front, it can feel as though the buying decision has already been made for you.
It has not.
Quick Clarity: When buying honey, treat words such as pure and natural as prompts for questions—not as proof. Start with the actual product identity, then check its declared origin or source, understand any botanical or processing claim, and ask what evidence would genuinely support the claims that influence the price.
That moves the decision from “Which jar sounds most authentic?” to “Which jar gives me the most meaningful information?”
Start With the Word That Matters Most: Honey
Before judging adjectives around the word honey, understand what the food itself is supposed to be.
The Codex Standard for Honey defines honey through both its plant source and the work of honeybees: bees collect nectar or certain plant-associated secretions, transform the material, deposit and dehydrate it, then leave it in the comb to ripen and mature. Codex also states that honey sold as honey should not have another food ingredient or food additive added to it.
That gives the shopper an important starting point.
If something else has intentionally been added, the question is no longer simply whether the front says “pure.” The relevant questions become:
What exactly is the product? What is declared? And does the description accurately represent what is being sold?
The UAE also has an adopted honey standard—UAE.S/GSO 147—alongside standards covering honey testing and prepacked-food labelling.
So honey is not an undefined golden syrup whose quality has to be guessed from attractive packaging. It is a recognised food category with identity and quality criteria.
The Eatwise Aha Moment
“Pure” is a conclusion. A shopper should first ask what evidence would allow that conclusion to be made.
This does not mean every jar needs a laboratory report attached to it.
It means the stronger the claim—and the more that claim affects price—the more specific the supporting information should become.
1. Separate the Front-Label Story From the Checkable Facts
Consider some common honey words:
Pure. Natural. Raw. Wild. Forest. Premium. Traditional.
They are not all making the same kind of statement.
“Raw” sounds like a processing claim.
“Sidr,” acacia or another named plant sounds like a botanical-source claim.
A named country or valley is a geographical-source claim.
“Organic” is a certification-related claim where used under an applicable organic system.
“Pure” may sound like an authenticity conclusion.
Each requires a different type of evidence.
That distinction matters because one attractive word cannot prove all the others.
A jar described as “raw,” for example, does not automatically prove its botanical origin.
A botanical name does not automatically prove absence of adulteration.
A country-of-origin statement does not tell you precisely how the honey was filtered or heated.
And “natural” does not tell you whether an authenticity assessment has ever been performed.
This leads to the first Eatwise rule for buying honey:
Translate adjectives into questions.
- If the pack says raw, ask what happened after extraction.
- If it says single-flower or monofloral, ask what supports the source attribution.
- If geographical origin is central to the product story, look for meaningful traceability.
- If authenticity testing is claimed, ask what was tested and by whom.
Specificity is more useful than reassurance.
2. Source Claims Should Become More Specific, Not More Romantic
Honey can legitimately differ by source.
Codex allows honey to be designated according to a geographical or topographical region when it was produced exclusively within that area. It also allows designation by floral or plant source when the honey comes wholly or mainly from that source and corresponds with that origin in its sensory, physicochemical and microscopic characteristics.
That tells us something useful about words such as:
- Sidr
- Acacia
- Wildflower
- Mountain honey
- Honey from a named region
The question is not whether such claims are automatically suspicious.
The question is whether the specificity of the evidence matches the specificity of the claim.
A beautiful image of flowers does not establish botanical origin.
A mountain photograph does not prove geographical exclusivity.
A bee illustration does not establish where the bees foraged.
Where source materially influences the price, it is reasonable to expect a clearer sourcing story.
3. Do Not Use Colour, Thickness or Crystallisation as a Home Purity Test
This is where honey shopping often becomes unnecessarily confusing.
One jar is pale and runny.
Another is dark and thick.
Another develops crystals.
It is tempting to convert these differences into a purity scale.
But genuine honey naturally varies.
Codex recognises honey colours ranging from nearly colourless to dark brown, and consistency ranging from fluid or viscous to partly or entirely crystallised.
Crystallisation in particular is not an automatic warning sign. FAO material on honey explains that crystallisation occurs because honey is a supersaturated sugar solution and that its rate is influenced by factors including glucose content, moisture, temperature and particles that can initiate crystal formation.
So:
Crystallised ≠ fake.
But the reverse is equally important:
Liquid ≠ proven pure.
Texture cannot authenticate the whole supply chain.
Neither can colour.
Neither can the speed with which honey runs from a spoon.
This is why popular kitchen “purity tests” should not be treated as substitutes for appropriate analytical authentication.
4. The Label Can Declare Authenticity-Related Facts. It Cannot Prove Everything by Itself.
This is an important distinction.
A label can tell you what the business is declaring:
- product identity;
- country or source information;
- botanical claim;
- processing terminology;
- producer or packer information;
- batch information;
- certifications where applicable;
- storage instructions;
- and sometimes testing or traceability statements.
Those are useful.
But a printed ingredient line saying “Honey” cannot, by itself, prove that no undeclared syrup has entered the product.
That is an authenticity question.
And authenticity can become technically complicated.
Recent scientific reviews describe honey authentication as an analytical challenge because natural honey composition varies and sophisticated adulteration may require combinations of chemical, spectroscopic, isotope-based or other analytical approaches.
The U.S. FDA's 2025 honey surveillance programme, for example, specifically tested products labelled as honey for undeclared sweeteners using stable carbon isotope ratio analysis, with expert review where results were atypical.
That provides the next important shopping lesson:
The label tells you what is being claimed. Appropriate evidence tells you whether a claim that requires verification is supported.
5. Match the Evidence to the Claim
Not every claim requires the same proof.
That sounds obvious, but it solves much of the confusion around premium honey.

Notice how much more useful these questions are than:
“Does it look pure?”
or
“Does the label say natural?”
Different claims require different evidence.
A botanical-origin assessment cannot automatically prove every possible form of adulteration.
A single authenticity test may not establish geographical origin.
A certification has a defined scope; it should not be stretched into claims it was never designed to prove.
Good transparency respects those boundaries.
Why Honey Authenticity Cannot Be Reduced to One Test
There is a second oversimplification worth avoiding: the idea that there must be one definitive laboratory test for “pure honey.”
Honey is naturally variable, while economically motivated adulteration can involve different undeclared sweeteners or misrepresentation of origin. Researchers therefore continue to develop and combine analytical methods for authentication.
Even regulators select methods according to the particular authenticity problem being investigated. FDA notes that its current stable-isotope approach detects a subset of undeclared sweeteners and that additional methods continue to be developed for other adulterants.
For a shopper, the practical conclusion is not:
“I need to become a honey laboratory analyst.”
It is:
“I should be cautious when one vague claim or one unspecified test is presented as proof of everything.”
That is a much more realistic consumer standard.
The Five-Check Honey Buying Framework
When two jars are competing for your attention, use these five checks.
1. IDENTITY
What exactly am I buying?
Start with the actual product name and declaration.
2. ORIGIN
Where does the producer say this honey comes from?
Look for meaningful geographical information where origin matters.
3. SOURCE CLAIM
Is a particular flower, forest, plant or other source being emphasised?
Ask whether the specificity of the evidence matches the claim.
4. PROCESS
What does “raw,” “filtered,” “unfiltered” or another processing term mean for this jar?
Do not supply your own definition when the manufacturer has not.
5. EVIDENCE
Which claims materially influence my purchase—and what would actually support them?
The bigger the claim or premium, the stronger the case for meaningful traceability or appropriate verification.
That is the Eatwise honey decision.

What Eatwise Would Prefer—and What We Would Question
Preferred when
The product is clearly identified, source information is reasonably transparent, important botanical or geographical claims are specific, and premium claims can be connected to evidence appropriate to those claims.
Acceptable alternative when
A straightforward honey does not carry an elaborate premium story but clearly presents what it is, where it comes from and who is responsible for the product.
A jar does not need six fashionable descriptors to be a reasonable purchase.
Case-by-case when
Words such as raw, unfiltered, forest, wild, monofloral, organic or single-origin materially influence the decision.
These terms can describe genuine attributes. Their meaning and supporting evidence should simply be assessed separately.
Requires verification when
The product makes strong claims about botanical exclusivity, precise geography, certification, absence of adulteration, specialised laboratory testing or unusual processing—and those claims are central to why the jar costs more.
Eatwise would question
A product that relies mainly on “pure,” “natural,” rustic imagery or a premium price while giving the shopper very little specific information about identity, origin, source, processing or verification.

Your Next Honey Purchase: Change the First Question
The next time two jars sit beside each other on a Dubai supermarket shelf, do not begin with:
“Which one looks more natural?”
Begin with:
“What exactly can I verify about this jar?”
- Read the product identity.
- Find the origin information.
- Understand the botanical claim.
- Ask what a processing term actually means.
- And if a major authenticity or premium claim influences your purchase, look for evidence relevant to that specific claim.
You do not need to distrust every honey label.
You simply do not need to outsource your entire decision to one reassuring adjective.
Implementation intention: When I next buy honey, I will check identity, origin, source claim, processing information and evidence behind the main premium claim before I let words such as “pure” or “natural” decide for me.

Does “100% pure honey” prove that a jar has been laboratory tested?
No. The wording itself does not establish what testing, if any, has been performed. If laboratory authentication is central to the product's selling proposition, look for information about what was tested, the method used and the scope of the conclusion.
Does crystallised honey mean sugar has been added?
Not necessarily. Crystallisation is a normal physical process in honey, influenced by its composition and storage conditions. Codex recognises honey in crystalline as well as liquid states.
Is darker honey automatically better quality?
No. Honey naturally varies in colour, and Codex recognises a range from nearly colourless to dark brown. Colour can relate to botanical source and composition, but colour alone does not prove authenticity or overall quality.
Does “raw honey” mean it is automatically better?
Not automatically. Treat “raw” as a process claim and ask what the producer means by it—for example, what happened during extraction, filtration, heating and filling. The word alone does not establish botanical origin, authenticity or universal superiority.
If the ingredients say only “honey,” is authenticity guaranteed?
The declaration tells you what the manufacturer is declaring. It does not independently authenticate the supply chain. Where undeclared sweeteners or origin fraud are suspected, regulators and laboratories use appropriate analytical methods rather than relying on the ingredient list alone.
